When to use which salt
You already own table salt and nothing else
Use it. Weigh the amount the calculator gives you in grams instead of measuring by the cup, and it will brine exactly as well as kosher salt. If iodine bothers you, pickling salt costs about the same and has none.
A recipe is written in cups or teaspoons for a specific salt
Convert it by weight first. "1 cup of kosher salt" means something different depending on the brand: 230 g if it is Morton, 134 g if it is Diamond Crystal. Run the amount through the salt conversion calculator before you touch the shaker.
You are pickling or fermenting and want a clear jar
Pickling or canning salt, or plain kosher salt. Both dissolve without the fine cloud table salt's anti-caking agent can leave behind. It is a cosmetic difference, not a safety one, but it matters more in a jar you will look at for months than in a bucket of turkey brine.
You want the large, easy-to-pinch crystal most recipes assume

Every source opened for this page agrees that salt type is a measuring problem, not a safety or a brining-power problem. The National Center for Home Food Preservation states plainly that "fermented and non-fermented pickles may be safely made using either iodized or non-iodized table salt." America's Test Kitchen's own substitution guide gives a ratio (1 tablespoon table salt to about 1 1/2 tablespoons Morton kosher or 2 tablespoons Diamond Crystal) that exists for exactly the reason this page does: the salts are interchangeable in effect but not in volume. Handle the Heat, ATK, and Wikipedia's pickling salt article all agree that table salt's anti-caking agent is the thing worth knowing about, not the iodine, and all three describe it causing a cloudy or sediment-flecked brine rather than any safety issue.
Where they part ways is the iodine taste question. Handle the Heat's salt guide is direct about it: iodine "adds an unpleasant slightly metallic taste to everything" and can smell like seaweed once dissolved in chlorinated tap water. America's Test Kitchen tested the opposite claim and reported that in a blind comparison of iodized and non-iodized salt, dissolved first in plain water and then in chicken stock, most tasters could not tell them apart either time, because the concentration of iodine in table salt is far below what most people can detect by taste. Yes. A brine is sodium chloride dissolved in water, and table salt is sodium chloride, so it seasons and moisturizes meat exactly the way kosher or sea salt does. Can I use sea salt instead of kosher salt for brining?
Yes, with one caveat depending on the grind. Why does kosher salt measure differently than table salt?
Crystal shape, not chemistry. Table salt crystals are small, dense cubes that pack tightly into a measuring spoon; a teaspoon holds about 6 g.
