Wet brine or dry brine for salmon
Most salmon brine guides online cover exactly one method: a wet brine, salt water, maybe some sugar, a few hours in the fridge. That works well, but a dry brine, salt and sugar rubbed straight onto the flesh instead of dissolved in water, is a real alternative that a lot of smokers prefer for a firmer texture and less added moisture, and there is surprisingly little solid guidance online for doing it safely. A wet brine is the faster, easier-to-control choice: dissolve the salt in water, submerge the fish, and the strength is set the moment you weigh the salt and the water. A dry brine takes longer to get right because the salt has to pull its own moisture out first, but it needs no container and leaves a denser texture some cooks prefer for smoking. Both need the same rest afterward to form the pellicle, and both lead to the same smoking step: hot smoke to 145°F, held for at least 30 minutes.

Dry-brine hours are this page's own house range, since no extension bulletin publishes a fixed time for a quick pre-smoke dry cure; it runs about 4 hours per inch, held between 2 and 10 hours. Trout and shrimp
The wet-brine math on this page works for any firm, oily fish, not just salmon. A whole 1 lb trout at 1.5 inches thick in a 6% brine comes out to about 57 g of salt and 8.5 hours, which is the seafood brine calculator's own trout preset, computed the same way as the salmon figures above. Shrimp and other shellfish are a different job: they're thin enough to season through in 15 to 30 minutes at 3.5 to 5%, and they're more often cooked outright than smoked for hours. Smoking and food safety
- This page covers the brine. The calculator above sets the salt, sugar, and time for the brining step only. It does not validate a smoker's time and temperature curve, and it cannot confirm that any particular home cold-smoking setup is safe. Follow your smoker manufacturer's instructions, or a tested recipe from a state extension service, for the smoking step itself, and check doneness with a calibrated thermometer.

- Cold-smoking carries real botulism risk. Cold-smoked fish is never cooked, so it depends entirely on salt content, a smoker temperature at or below 90°F, and refrigeration to control Clostridium botulinum, per the same FDA guidance. Even with commercial controls in place, the FDA states that the combination of safeguards present in smoked fish "are not adequate to prevent toxin formation by C. botulinum type A and proteolytic types B and F." A home setup has no reliable way to measure water phase salt in the finished fish, so treat cold-smoking as a process to follow exactly from a tested source, not to improvise from this page.
- Refrigerate at 40°F (4°C) or below while the fish is raw or brining; that's the general USDA refrigeration and danger-zone rule. Once the fish is smoked, go colder still: Ohio State and Pacific Northwest Extension both recommend 36 to 38°F, eaten within 1 to 2 weeks or frozen.
- Never brine on the counter, and never let raw or brining fish sit between 40°F and 140°F for more than 2 hours.
- Discard the brine after one use. It has held raw fish and its strength has already changed.
- This isn't commercial food-safety guidance. Anyone producing smoked fish for sale falls under the FDA's HACCP rules for seafood processors, which are stricter and more specific than anything on this page.

How long does brined salmon last in the fridge?
Raw fish, brined or not, keeps 1 to 2 days in the refrigerator before it needs to be cooked, the same general rule that applies to any raw seafood. Once it is smoked, it keeps longer: Ohio State University Extension recommends storing smoked fish below 36°F and eating it within 14 days, or freezing it for up to 2 months. Several extension sources put finished smoked fish colder than a typical fridge setting, 36 to 38°F rather than the general 40°F rule for raw food.
Is home-smoked salmon safe?
It can be, if the fish reaches a safe internal temperature and the brine, salt level, and storage all follow a tested process; the risk is real if any of those steps gets skipped. Clostridium botulinum, the bacterium behind botulism, can grow without oxygen in vacuum-packed or tightly wrapped smoked fish held at refrigerator temperature, and it does not reliably announce itself with an off smell or taste. Do you rinse salmon after brining?

Can you brine frozen salmon?
