What Cure #1 actually is

Cure #1 is the product behind most of the names you will see on a bag of curing salt: Prague Powder #1, Insta Cure #1, DQ Curing Salt, and simply "pink curing salt." It is table salt with 6.25% sodium nitrite mixed through it, colored pink with a food-safe dye. The dye carries no nutritional or curing function of its own; its entire job is to make the product visually impossible to mistake for a jar of plain salt sitting next to it on the same shelf.

Cure #1 vs. pink Himalayan salt

This is the mix-up worth spelling out plainly, because it is a genuine food-safety hazard rather than a labeling curiosity. Pink Himalayan salt is plain sodium chloride with trace minerals, mostly iron oxide, that happen to tint it pink or peach. It contains no nitrite and cures nothing; using it in place of Cure #1 leaves a smoked or long-held product with none of the protection against Clostridium botulinum that nitrite provides.

Cure #1's pink color runs the opposite direction. It is a dye added on purpose, specifically so a cook reaching for salt in a hurry sees pink and stops. Confusing the two products the other way, using Cure #1 as if it were table or Himalayan salt at a normal seasoning ratio, delivers a nitrite dose many times over any safe limit, because a cure that is correct at 0.25% of meat weight becomes wildly excessive at the volume a cook would use to season food by taste.

Keep the two salts in different containers, both clearly labeled, and never store Cure #1 anywhere it could be reached for by taste or by a child. The pink color of curing salt is not a decorative or mineral trait; treat any pink salt in a curing context as Cure #1 until the label says otherwise.

Cure #1 vs. Cure #2 vs. Tender Quick

Cure #2 (Prague Powder #2) starts from the same salt-plus-nitrite base as Cure #1 and adds sodium nitrate. Nitrate does nothing on its own; it breaks down into nitrite slowly, over weeks to months, which is exactly the protection a product like salami, bresaola, or coppa needs while it air-dries at room temperature far longer than bacon ever sits. Put Cure #2 on a batch of bacon and it adds nitrate the cure never has time to use. Put Cure #1 on a months-long dry-cured salami and the nitrite runs out long before the product is safe. The two are not interchangeable, and this site does not offer Cure #2 dosing anywhere, because every calculator here covers short, refrigerated cures.

Morton Tender Quick is a third, separate product: about 0.5% sodium nitrite and 0.5% sodium nitrate in a salt-and-sugar base, dosed by Morton's own direction of 1 tablespoon per pound of meat rather than by the 0.25% rule Cure #1 uses. It is not a drop-in substitute for Cure #1 measured the same way; the bacon curing calculator supports it as a separate option with its own dose, for exactly this reason.

How much Cure #1 to use

The rate does not change with the cut: 0.25% of the meat's weight, which works out to 156 ppm ingoing sodium nitrite every time, whether the meat is a quarter pound or a 25 lb batch. Nitrite ppm limits, and why they exist

Two federal ceilings apply to a home-cured product. USDA's meat inspection regulations, 9 CFR 424.22(b), cap ingoing sodium nitrite at 200 ppm for dry-cured bacon and at 120 ppm for pumped or immersion-cured bacon; the lower figure applies when the cure is injected or the product soaks in a brine rather than being dry-rubbed. Separately, FDA's food-additive regulation for sodium nitrite, 21 CFR 172.175, sets a 200 ppm ceiling specifically for home meat-curing preparations and requires any such product sold to consumers to carry a Keep out of the reach of children warning on the label. The standard 0.25% Cure #1 dose lands at 156 ppm, comfortably inside both limits with margin for measuring error.

The limits exist because of Clostridium botulinum, the bacterium behind botulism, a rare but severe form of food poisoning caused by a toxin the organism produces as it grows. Its spores are common in the environment and can survive cooking; what stops them from growing out and producing toxin in a cured product is a combination of salt, refrigeration, and nitrite. Nitrite's role matters most for products that are cold-smoked or otherwise held for hours in temperatures the organism can grow at, which is why every cold-smoking step on this site assumes the product was cured with nitrite first. A properly weighed dose is high enough to do that job and, by design, far below the ppm level the regulations treat as a food-additive ceiling.

How long different cuts take to cure

For any cut cured Cure #1's way, dry and refrigerated, the rule is about 7 days per inch of thickness at the thickest point, with a 7-day floor and a 21-day ceiling. A 2-inch pork belly (bacon) cures for 14 days; a thinner 1-inch cut still gets the full 7-day floor, because the cure needs time to reach the center regardless of how thin the piece is. The same day count applies whether the cut is pork belly for bacon, pork loin for Canadian bacon, pork jowl, or pork shoulder for cottage bacon; only the thickness changes, not the percentage of salt or Cure #1.

A wet cure, where the meat sits submerged in a brine at around 40% water by the meat's weight, moves faster because the cure surrounds the meat instead of working in from one exposed surface: 3 to 7 days depending on thickness, using the same 3-days-per-inch pattern with a 3-day floor and a 7-day ceiling.

Longer dry cures, salami, bresaola, and other products made with Cure #2, run for weeks to months under controlled temperature and humidity rather than a plain refrigerator, and are outside what this guide or this site's calculators cover; that is a different process with its own equipment and its own safety margins, not a longer version of the bacon method.

Overcuring and undercuring

Undercuring is the more dangerous failure. A cure that has not had enough time to reach the center of a thick cut, or a batch made with too little Cure #1 for the weight, can leave the interior without the nitrite protection the product needs, particularly for anything that will be cold-smoked. Visually, undercured meat often shows gray, uncured patches in the center when sliced, rather than the even pink of a fully cured piece; that gray core is a sign to treat the batch as improperly cured, not a purely cosmetic issue.

Overcuring, going past the time ceiling or the salt percentage, is mainly a quality problem rather than an acute safety one within this site's presets: the meat gets saltier and firmer the longer it sits past the point the cure has fully equilibrated, since an equilibrium cure (below) cannot exceed the percentage of salt you weighed out. The exception is dosing, not time: adding extra Cure #1 "to be safe" pushes the ppm over the regulatory limit and does not add any additional protection, since the 156 ppm standard dose was already set with margin built in. More Cure #1 is not a safety upgrade; it is an overdose.

Equilibrium curing vs. the percentage-of-water method

Equilibrium curing sets salt, sugar, and Cure #1 as a percentage of the meat's own weight, dry-rubbed or dissolved into a measured amount of water, rather than as a percentage of a large volume of brine. Because the meat can only take up the salt you actually put on it, an equilibrium cure at 2.5% salt cannot come out saltier than 2.5%, whatever happens if the batch sits a few days past its target time. There is no rinse step required to correct for oversalting, though rinsing before drying is still standard practice for texture. The older, still common method treats the cure as a percentage of the water in a large brine the meat soaks in, closer to how a turkey brine works. It is faster to mix and forgiving of imprecise meat weight, but the final saltiness depends on how long the meat soaks and how much of the brine's salt actually diffuses in, so a batch left too long or too briefly comes out over- or under-seasoned even with the same brine recipe. For nitrite specifically, that soak-time dependence is also why USDA sets a lower ppm ceiling, 120 ppm rather than 200 ppm, for pumped and immersion-cured bacon: more of the ingoing nitrite in a soak method tends to end up in the finished product than in a dry rub.

  • Never substitute pink Himalayan salt for Cure #1, or the reverse. They look similar and do entirely different jobs; see the section above.
  • Never eat curing salt directly, and never use it as a table-salt substitute. At curing doses, weighed against meat, it is safe; consumed directly or used at seasoning volumes, sodium nitrite is acutely toxic, and it is legally required to carry a child-safety warning for exactly that reason (21 CFR 172.175).
  • Store it labeled, sealed, and out of reach of children and pets. Keep it physically separate from ordinary salt in the kitchen.
  • Hold the meat at 36 to 40°F (2 to 4°C) for the entire cure. Nitrite and refrigeration work together; neither one substitutes for the other.
  • Do not cold-smoke or extend the hold time of anything that was not cured with nitrite. That combination of warm, low-oxygen conditions is exactly what Clostridium botulinum spores need to grow.
