Wet brine vs dry brine by cut

Recipe sites usually pick one method and move on. Both work on chicken, and which one is right changes by cut: a boneless breast has no skin to protect and no bone to slow the salt down, while a whole bird has both. How to wet brine chicken

  • Weigh the water, then the salt. 5% of the water's weight is the standard; 47 g per quart, 189 g per gallon. Dissolve it fully before the chicken goes in.
  • Chill the brine to 40°F (4°C) or below before the chicken touches it, USDA FSIS's refrigeration limit for raw poultry.
  • Submerge the chicken in a food-grade container or a brining bag; the container size calculator sizes the vessel from the meat and the water.
  • Refrigerate for the cut's time, 30 minutes for wings up to 8 hours for a whole bird. Longer is not better; Morton's own guide pairs a stronger brine with fewer hours, not more.
  • Drain, pat dry, and cook to 165°F (74°C). Do not rinse; USDA FSIS advises against rinsing raw poultry because it spreads bacteria around the sink.

How to dry brine chicken

  • Pat the chicken fully dry first, inside and out; salt slides off a wet surface instead of sticking.
  • Weigh the salt at the cut's rate: about 1 teaspoon of Diamond Crystal per pound for a whole bird, 3/4 teaspoon per pound for bone-in pieces, or the quick 1 1/2 teaspoon per pound method for a boneless breast (Cook's Illustrated's salting chart).
  • Rub it over and under the skin, and into the cavity of a whole bird. There is no water and nothing to dissolve it into but the meat's own moisture.
  • Set it uncovered on a wire rack over a rimmed sheet pan in the refrigerator for the cut's hours, so air reaches the skin on every side.
  • Cook to 165°F (74°C) without rinsing. The dry brine calculator has the optional baking powder ratio for extra-crisp skin.

Safety

  • 40°F (4°C) or below for the whole brine, wet or dry, in the refrigerator or an iced cooler with a thermometer in it. Never brine on the counter.
  • Never over 24 hours wet, and chicken rarely needs more than a few. Past that the texture goes soft and the bird tastes salty rather than seasoned.
  • Thaw fully before brining. Salt cannot move into frozen meat, so a partly frozen bird seasons unevenly.
  • Do not rinse raw chicken before or after brining; pat it dry instead. Rinsing spreads bacteria around the sink (USDA FSIS).
  • Discard the brine and sanitize the container once the raw chicken comes out. It has held raw poultry and is not safe to reuse or serve.
