Which salt to use, and when to skip it

Use without hesitation

Kosher salt (Diamond Crystal or Morton), pickling or canning salt, and plain fine sea salt. All four are additive-free sodium chloride, which is exactly what NCHFP asks for: "Use of canning or pickling salt is recommended." Kosher salt is not a special fermentation salt, it is the same plain NaCl in a coarser grind, and most kitchens already have a box of it. The only thing to get right is the scale: a cup of Diamond Crystal (134 g) and a cup of Morton (230 g) are not interchangeable by volume, only by weight.

Usable, with a caveat

Non-iodized table salt with an anti-caking agent is fine chemically; the only downside NCHFP names is a cloudy brine, which is cosmetic. Iodized table salt is the same story with one more layer: NCHFP calls it safe for fermented pickles, a 2018 peer-reviewed study found no significant effect on the lactic acid bacteria, and Colorado State and Minnesota Extension both still recommend against it as a "why risk it" precaution rather than a documented failure (see the sources section below). Where the sources agree, and where they do not

Every extension source opened for this page agrees on the mechanism and on the defaults. Plain, additive-free salt, whether pickling, canning, kosher, or fine sea, is the safe choice; reduced-sodium salt does not belong in a ferment (NCHFP: "not recommended"); and the reason 2% works at all is that salt "favors the growth of desirable bacteria while inhibiting the growth of others" (NCHFP), a mechanism Clemson HGIC states the same way for the specific bacteria that make sauerkraut taste like sauerkraut.

Iodized salt is where the written guidance splits. NCHFP's pickling page states fermented pickles "may be safely made using either iodized or non-iodized table salt." What happens if you use the wrong salt for fermentation?
