What is Brining?

Brining involves soaking food (usually meat, poultry, or fish, but sometimes vegetables) in a salt solution (wet brining) or rubbing it directly with salt (dry brining). The primary goals are:

  • Enhanced Moisture: Salt alters the protein structure within meat, allowing it to absorb and retain more moisture during cooking. This results in a juicier final product.
  • Improved Flavor: The salt seasons the food thoroughly, and other optional ingredients like sugar, herbs, and spices can also penetrate the food.
  • Tender Texture: Brining can help break down some muscle proteins, leading to a more tender bite.

Wet Brining vs. Dry Brining

  • Dry Brining (Pre-Salting): Salt (and optionally sugar/spices) is rubbed directly onto the surface. The salt draws out moisture, creates a concentrated brine on the surface, and then this brine is reabsorbed, seasoning the meat effectively without adding extra water weight.
